Chipotle Grilled/Baked Chicken

Category:Barbecue & Grilling

Description:
Just had this for dinner although I started marinating this the day before. The recipe originally calls for grilling the chicken, I opted to bake and broil it in the oven to make the process easier.

Pasensya na sa picture, how amateur no? Hehehehe! The picture doesn't really do the dish justice.

Ingredients:
- 10-15 pcs chicken thighs
- Worcestershire Sauce
- Chipotle Tabasco
- Lemon Pepper Seasoning
- Juice of 1 Lemon
- Salt
- Pepper
- 1/4 cup water

Directions:
Marinate chicken thighs in Worcestershire Sauce, Chipotle Tabasco (about half the big bottle or if you want it spicier, add more), Lemon Pepper Seasoning, juice of 1 lemon and extra pepper. Leave it for at least 2 hours, best if you marinate overnight.

Preheat oven to 350 degrees F.

Set marinade aside and line chicken in a roasting pan. Season both sides with salt and pepper then place in oven.

Add 1/4 cup water to marinade, microwave on high for a minute, use this liquid to baste chicken. Make sure you baste chicken at least every 3 minutes, bake chicken for 35-40 minutes, depending on the oven you're using.

After 40 minutes, remove the sauce from the roasting pan and then set your oven on broil (LOW) for 10 minutes, it'll make the chicken look like it's fresh from grill. ;-)

Very tasty, juicy and not too spicy. =)
