Description:
Isa ang PARES sa napakadaming bagay na namimiss ko sa atin. Samahan mo pa ng kalamansi, toyo and chili garlic! SOLVE! Masarap din ang may kasamang Hen Lin Siomai! Miss ko na talaga! =) Kailangan kong maluto to and I did! There are a lot of versions of this recipe online so you kind of end up with a recipe yoou can call your own. =) Here's my simple Braised Beef Brisket or PARES. =)
Ingredients:
- 3-4 lbs. Beef Brisket (either bone in or boneless will do, make sure it's perfectly marbled)
- Sesame Oil (you can also use peanut oil, which is the one recommended on most sites)
- 4 cloves of garlic, minced
- 3 tbsp Hoisin sauce
- 3 tsp sugar
- 5 tbsp ground bean sauce (Lee Kum Kee)
- 1 spring onion, chopped
- 1 small piece ginger, peeled and crushed
- 3-4 tbsp soy sauce
- 2 tbsp dry sherry or Shaoxing rice wine
- 3 cups water
- Pepper to taste
Directions:
Brown the beef on a non-stick skillet. When done, remove beef and set aside. Using the same pan, add a dash of sesame oil then sautee garlic, spring onion and ginger, add beef afterwards.
Add soy sauce followed by the dry sherry or rice wine. Let it simmer for 2 minutes then add the ground bean sauce, Hoisin sauce, sugar, pepper to taste and water and let it simmer for 2 hours or until sauce becomes thicker and meat is really tender.
Taste and season if needed. If it turns out too salty, you may add more water and simmer and a little sugar. If it's a bit bland, add more Hoisin and a tablespoon ground bean sauce.
Serve over white rice. You may also use bokchoy if you want vegetable on the side.
