Fettuccine Alfredo

Description:
My version of Fettuccine Alfredo. You can opt to use spaghetti noodles or linguini or penne pasta if you want. :)

The original Alfredo recipe doesn't have bacon and mushroom and the pasta is just served with the white sauce. I just like mine with a little meat and mushroom. :) You may substitute the bacon with: ham, grilled chicken strips, shrimp or any seafood that you feel will suit the sauce. :)

Did you know that you can also use the sauce (Bechamel) minus the bacon and mushroom for making baked cauliflower which makes an excellent side dish! :)

Ingredients:
- 3 packs of All Purpose Cream (I like Alaska because not only is it cheaper than Nestle, it also has that lingering buttery taste. My Mom likes Nestle more as she thinks Alaska is a bit sweet.)
- 5 cloves of garlic minced
- 1 small white onion chopped finely
- 1 cup quickmelt cheese
- 1/2 cup Parmesan Cheese (You may also use left over queso de bola, it'll taste as good)
- 1 pack bacon (size or quantity will depend on how much bacon you like in your pasta. I try not to use ham because it will give the sauce more sweetness and I do not like sweet Alfredo sauce)
- 1 big can sliced mushrooms
- 2 tablespoons butter
- 1 1 kilo pack of pasta (If you want the dish really creamy, do not use all of the pasta)
- Salt and Pepper to taste

Optional:
- Garlic powder (I like mine garlic-y)
- 1 Bell Pepper diced (some like it with bell pepper, I like mine just with bacon and mushroom)
- 1 small can of Green Peas (Again, this is optional)

Directions:
1) Start by frying the bacon in a pan that will fit both the sauce and the pasta. You may cook the bacon well done and crunchy, I like mine medium well.
2) Set aside bacon to one side of the pan and add the butter and the garlic. Sautee until garlic is a bit brown then add the chopped onions.
3) After sauteeing garlic and onion, add mushroom and add back to the mix the bacon you have set aside.
4) Add a bit of salt (make sure not to add too much) and ground black pepper. (I like lots of black pepper!)
5) Slowly add all 3 packs of all purpose cream while stirring, making sure nothing sticks to the bottom of the pan. Make sure you keep the heat a bit lower than medium.
6) Add the cheese little by little, again making sure you stir it well to make sure the cheese melts okay.
7) Cook pasta until al dente. To check if pasta is cooked, get a piece to bite/taste.
8) Once sauce is cooked, add pasta to sauce. Make sure not to add everything at once, you need to make sure you have enough sauce to cover the pasta. The sauce will later on be absorbed by the pasta so to avoid the dish to look dry, add just the right amount of pasta. :)
9) Sprinkle parsley on top and serve with garlic toast. :)
